Ingredients
  • 4ounces penne pasta(1 ½ cup dry)
  • 1cup regular OR reduced fat Italian dressing
  • 1/2cup grated Parmesan cheese
  • 2medium ears of sweet corn (about ¾ cup kernels)
  • 1tablespoon honey
  • 1cup halved grape tomatoes OR chopped tomatoes
  • 1cup diced zucchini
  • 1/4cup diced green bell pepper
  • 1/4cup fresh basil, thinly sliced
Servings: (2/3 cup) servings
Instructions
  1. Cook pasta according to package directions. Drain and cool. In large bowl combine pasta, Italian dressing, and parmesan cheese.
  2. In large saucepan cook sweet corn in boiling water and honey for 2 to 5 minutes. Drain and remove kernels from cob.
  3. Stir corn, tomatoes, zucchini, and bell pepper into pasta mixture. Just before serving, stir in basil.
