Ingredients
- 4ounces penne pasta(1 ½ cup dry)
- 1cup regular OR reduced fat Italian dressing
- 1/2cup grated Parmesan cheese
- 2medium ears of sweet corn (about ¾ cup kernels)
- 1tablespoon honey
- 1cup halved grape tomatoes OR chopped tomatoes
- 1cup diced zucchini
- 1/4cup diced green bell pepper
- 1/4cup fresh basil, thinly sliced
Servings: (2/3 cup) servings
Instructions
- Cook pasta according to package directions. Drain and cool. In large bowl combine pasta, Italian dressing, and parmesan cheese.
- In large saucepan cook sweet corn in boiling water and honey for 2 to 5 minutes. Drain and remove kernels from cob.
- Stir corn, tomatoes, zucchini, and bell pepper into pasta mixture. Just before serving, stir in basil.
