Ingredients
Cookies:
- 1 3/4cup all-purpose flour
- 2/3cup baking cocoa
- 1teaspoon baking soda
- 1/2teaspoon salt
- 1cup butter, softened(2 sticks)
- 3/4cup sugar
- 2/3cup packed brown sugar
- 2 eggs
- 1/2teaspoon mint extract
- 1(12 oz.) package semi-sweet chocolate chips
- 1/2cup candy-coated chocolate pieces(M&M's)
Frosting:
- 1(3 oz.) package cream cheese, softened
- 1/2teaspoon mint extract
- 3cups confectioner’s sugar
- 1tablespoon milk
- 3-5drops green food coloring

Instructions
For cookies:
- Heat oven to 375°F. Mix flour, cocoa, baking soda, and salt; set aside.
- Beat butter and sugars in a large bowl with mixer at high speed until light and fluffy. Add eggs and mint extract; beat until well blended. Gradually mix in flour mixture. Stir in chocolate chips.
- Drop heaping tablespoons of dough onto ungreased cookie sheets. Bake about 10-12 minutes or until set and beginning to crackle on top. Cool 2 minutes; remove from cookie sheets to wire rack to cool.
For frosting:
- Beat cream cheese with mint extract until light and fluffy. Gradually beat in powdered sugar. Beat in milk and green food coloring until smooth.
- Top the center of each cookie with a silver dollar-sized circle of frosting. Add three candy-coated chocolate pieces for garnish, if desired.
Recipe Notes
With a few minor changes, you can make these cookies into bars. Chocolate Mint Brownie Bars: Mix cookie dough as directed in recipe and spread into a 15x10x1-inch pan. Bake at 350 degrees for 18 minutes or until set. Cool. For frosting, combine 8 ounces cream cheese, softened, 1/2 teaspoon mint extract, and 3-5 drops food coloring. Gradually mix in 5 cups powdered sugar. Add 1 - 2 tablespoons milk to thin to desired consistency for frosting. Spread over bars and sprinkle with candy-coated chocolate pieces.
