Ingredients
  • 2bunches broccoli
  • 8slices bacon
  • 1small red onion, chopped(about 2/3 cup)
  • 2/3cup raisins
  • 1cup mayonnaise
  • 1/2cup sugar
  • 2tablespoons white vinegar
  • 1/4cup sunflower seed kernels

Instructions
  1. Cut broccoli into bite-sized pieces (about 8 cups) and place in large bowl.
  2. Cook and crumble the bacon. For an easy, low-mess method, place a cooling rack on top of a sheet pan (with low sides) lined with parchment paper or aluminum foil. Add a single layer of bacon on top. Bake at 400 degrees for 15 to 17 minutes or until bacon is desired level of crispness.
  3. Stir in onion and raisins. Cover and chill.
  4. In a small bowl whisk together mayonnaise, sugar, and vinegar. Cover and chill until serving.
  5. Just before serving, combine broccoli mixture and dressing. Stir in sunflower seed kernels.
Recipe Notes

When I'm making this salad for a family dinner, I add the dressing and the sunflower seed kernels just before serving so the salad doesn't get soggy.
