Ingredients
  • 1lb. lean ground beef
  • 1(12 ounce) jar chunky salsa
  • 1cup sweet corn(thawed & drained)
  • 3/4cup Miracle Whip dressing
  • 1tablespoon chili powder
  • 2cups coarsely crushed tortilla chips
  • 2cups (8 oz.) shredded Colby-Jack cheese

Instructions
  1. In a large skillet brown the ground beef. Drain. Add salsa, corn, dressing, and chilli powder. Stir until combined.
  2. Layer half each of the meat mixture, chips, and cheese into a greased 2-quart casserole dish. Repeat layers.
  3. Bake at 350 degrees for 20 minutes or until thoroughly heated. Serve topped with shredded lettuce and chopped tomato, if desired.
Recipe Notes

This recipe is from my cousin, Jill. We lived together right before my husband, Scott, and I got married. I remember Jill and I making this casserole together in our little apartment. It was delicious then, and it still is today!

Feel free to tailor this recipe to your family's taste. Sometimes I cut back the Miracle Whip to 1/2 cup and reduce the amount of cheese slightly to lighten it up a bit. We also like to add other veggies on top such as chopped green onions and bell peppers, along with the lettuce and tomato.
